- Best served straight from fridge or a cooled lunchbox.
- *Please note that even if you buy pitted dates, you will still need to check each date for a pit or pit fragments. I usually do this by squeezing and then bending in half each date as I pop them into the mixer bowl. I discovered this the hard way, after finding some very hard pit fragments mixed through a recipe that called for dates.
- If your dates are a little dry (for example, this happens to me when they have been sitting in my glass storage container for a while), then you will probably find you need more water (3-4 Tbs). When they are straight from the pack, I tend to just need 2 Tbs of water before the mix starts sticking together.
- I usually use whole rolled oats, however you could also use quick oats for this recipe.
- Successful variations of the above recipe I have made are:
- Using 45g dessicated coconut (instead of 35g) and 1 Tbs of chia seeds (approx. 15g) instead of sunflower kernels. (I had run out of sunflower kernels at the time).
- Adding 20g of linseed/flaxseed and reducing the rolled oats to 70g. If you are using linseed meal simply place in the mixer with other ingredients at step 1. If using whole linseeds, place into mixer bowl first and mill 10 seconds / speed 10 / mc on, scrape sides and then continue as per step 1.
- For a hint of caramel flavour, use 2 tsp (approx. 10g) mesquite powder with 3 tsp (approx. 15g) cacao powder, instead of 25g cacao powder.
- Store in fridge in an airtight container.
- Can be frozen.
