Notes
- Best served straight from fridge or a cooled lunchbox.
- This recipe was inspired by Louise Fulton Keats "Apricot and Coconut Balls" in "Thermomix Cooking for your Baby & Toddler".
- Some alternatives to the fresh orange zest and juice are:
- 3 Tbs/60g water and 5 drops of food grade orange essential oil (if you're comfortable with ingesting essential oils).
- 60g orange flesh instead of juice, putting the orange flesh into the mixer with the apricots and zest at step 1. You may get some fibrous bits of orange mixed through which I don't mind, but the kids aren't so keen (so this option is a little less "lunchboxy").
- Although the bites in these photos have been made with preserved dried apricots, they can also be made with preservative free dried apricots. A while back we had a bad preservative free apricot experience, and we're not quite ready to go back, but please don't let me put you off!
- These can also be rolled into bliss balls, but generally I'm not a fan of rolling food into little balls. (Call me lazy, but who can be bothered with that!) Instead I prefer to squish the mix into a tray and cut into "bites" as needed.
- Store in fridge in an airtight container.
- Can be frozen.
